Abstract

Artikel ini memberikan gambaran tentang Dadiah dari dua perspektif. Pertama, Dadiah adalah minuman probiotik khas masyarakat Minangkabau yang diwariskan turun-temurun. Kedua, proses pembuatan Dadiah merupakan fermentasi kimia yang dapat dijadikan sumber pembelajaran sains berbasis etnosains. Kajian dilakukan melalui studi literatur untuk mengumpulkan informasi sebanyak mungkin. Kesimpulannya, Dadiah kaya nutrisi, mengandung bakteri asam laktat probiotik, berpotensi dikembangkan sebagai pangan fungsional, sekaligus menjadi sumber inspirasi pembelajaran sains berbasis budaya lokal.
