Repository Universitas Negeri PadangAnalisis Penerapan Audit terhadap Pelayanan Food and Beverage Service di Four Point by Sheraton BatamRibby DwitaPutriauthorFour Points by Sheraton Batam merupakan salah satu hotel berjaringan internasional di bawah Marriott International yang wajib menerapkan standar brand (Brand Standard Audit) secara konsisten pada seluruh aspek operasional, termasuk Departemen Food and Beverage (F&B) Service. Konsistensi penerapan standar tersebut dievaluasi secara berkala melalui mekanisme Brand Standard Audit. Studi kasus ini bertujuan untuk mendeskripsikan pelaksanaan Brand Standard Audit pada Departemen F&B Service, mengidentifikasi temuan ketidaksesuaian (non conformity) antara standar brand dengan praktik aktual di lapangan, serta merumuskan rekomendasi perbaikan yang dapat diterapkan. Metode yang digunakan adalah pendekatan deskriptif kualitatif dengan metode pengumpulan data berupa observasi partisipatif selama pelaksanaan PLI, wawancara dengan supervisor dan staf F&B Service, serta studi dokumentasi terhadap standard operating procedure (SOP) dan hasil audit internal hotel. Hasil studi kasus menunjukkan bahwa secara umum Departemen Food and Beverage Service Four Points by Sheraton Batam telah menerapkan sebagian besar standar brand Marriott International. Namun masih ditemukan ketidaksesuaian pada aspek grooming standard, sequence of service, penggunaan merek Coca-Cola sebagai pengganti Pepsi karena keterbatasan distributor Pepsi di batam, serta kotak Take away yang belum dicetak dengan identitas Four Points By Sheratin Batam. Sebagai solusi sementara sementara, hotel menggunakan stiker berlogo Four Points By Sheraton Batam pada setiap kotak Take Away terkena biaya pencetakan melebihi anggaran. Studi kasus ini diharapkan dapat menjadi bahan evaluasi bagi manajemen hotel dalam meningkatkan konsistensi kualitas layanan F&B serta sebagai referensi akademik terkait implementasi brand standard audit di industri perhotelan berjaringan internasional.Hoaspitality Management2026FPP UNPMonograph
