Penelitian ini dilakukan pada salah satu kedai kopi di kota Payakumbuh yaitu Uda Espresso menggunkan metode deskriptif kualitatif untuk menghitung harga pokok produksi satu gelas kopi single origin. Data yang digunakan diperoleh melalui wawancara langsung kepada pihak manajemen kedai kopi Uda Espresso mengenai perumusan harga pokok produksi dan hasil observasi pada proses pembuatan satu gelas kopi single origin. Hasil penelitian menunjukkan bahwa kedai kopi Uda Espresso dapat mengakui nilai laba kotor yang lebih besar dari penjualan kopi single origin. Hal ini terjadi karena pada beberapa komponen harga pokok produksi, manajemen Uda Espresso membebankan biaya yang terlalu tinggi.
